Description
This T.Sonthi bottling is a 10 year Barbados molasses rum selected by Thomas Sontheimer, presented at a gentle 40%. It is recorded as sweetened, and the copy stays honest about that, this is an openly dessert-style rum rather than a dry, structured Bajan sipper.
Distilled on a column still and aged in ex-bourbon oak, the rum leans hard into rich, confectionery sweetness. Toffee, caramel and vanilla dominate from nose to finish, joined by fudge, cream and a burnt-sugar, creme-brulee character that gives it an almost liqueur-like feel. There is little of the banana, spice and oak structure that defines classic Barbados rum, so this is best taken on its own terms. At 40% it is soft, smooth and very easy to drink, a low-effort after-dinner pour for those with a sweet tooth, and a flexible base for playful, pudding-leaning cocktails rather than a serious neat exploration.
