Foursquare Doorly‘s 3 Years White

This is Doorly's white from Foursquare, the everyday cocktail end of Richard Seale's St Philip range in Barbados. Unsweetened and at 40%, it is a young, deliberately light rum aged three years and filtered clear, made to mix rather than to sip slowly, and honest in keeping no added sugar despite its easy, gently sweet feel.

The spirit is the classic pot-and-column Bajan blend, matured briefly in ex-bourbon oak before filtration strips the colour. Expect light banana and coconut with vanilla and a fresh, citrus-tinged lift, the palate clean and a touch warm, the finish short, fruity and brisk. It is simple and reliable rather than complex, and it shines exactly where it is intended, as a crisp, lemon-bright base for a daiquiri or a straightforward Barbados mixer.
