This GlenAllachie was bottled by That Boutique-y Whisky Company, a 10 year old, at 49.7%, a festival bottling. Orange, raisin and a treacle edge, with dried fruit, fig and walnut from the cask. Revived in 2017 by master distiller Billy Walker, it now leads with single malt. This is a deep, sherried Speyside single malt.

Description
A GlenAllachie of a 10 year old chosen by That Boutique-y Whisky Company, at 49.7%, bottled for a whisky festival. GlenAllachie is a Speyside single malt known for its heavy sherry and wine cask maturation. Its water is the Lochnagar Burn, drawn down from the slopes of Ben Rinnes.
The spirit was run slowly off the spirit still, for a thick, ester rich spirit the casks then deepen. It was fully matured in an Oloroso cask, the wood deep in the rich spirit. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. The wood frames the spirit without ever stripping the full Speyside body. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit. Maturation runs slow and even in the on site dunnage warehouses at Aberlour. The casks are picked closely, the wood matched to the rich GlenAllachie make.
At a hearty 49.7% it carries real weight. A rich orchard sweetness and dark sugar, with dried fruit, fig and walnut from the cask. It is full and fruity, the spirit carrying the cask. The finish is rounded, dark and spiced. This is GlenAllachie's deep, fruity Speyside style.
