This GlenAllachie was bottled by That Boutique-y Whisky Company, an 8 year old, at 53.9%. A rich, sherried malt of date, fig and a warm cinnamon. Its four stills carry downward angled lyne arms for a fuller spirit. Water comes from the Lochnagar Burn off the slopes of Ben Rinnes. This is the sherry led malt of Aberlour.

A GlenAllachie of an 8 year old chosen by That Boutique-y Whisky Company, at 53.9%, one of 231 bottles. GlenAllachie is a Speyside single malt, the home distillery of master distiller Billy Walker. It was built for the 1960s blend boom, its make long destined for the blender's vat. Its water is the Lochnagar Burn, drawn down from the slopes of Ben Rinnes. It matures its spirit in sixteen dunnage warehouses on the distillery site at Aberlour.
Taken gently through wash and spirit stills, shaping a rich Speyside body with real weight. It rested in ex-Bourbon oak, oak lactones lending a creamy vanilla. At an extractive age eugenol lends a clove note and lactones a coconut, the spirit rich, fruity and full. The wood frames the spirit without ever stripping the full Speyside body. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate.
At 53.9%, undiluted, it is dark and full. Date, fig and a warm cinnamon, with a soft vanilla from the oak. Beneath it run dried fruit, dark sugar and a warm spice. A deep finish ends on dried fruit and a dark chocolate. This is GlenAllachie's deep, fruity Speyside style.
