Known for its heavy sherry and wine cask maturation. It matures in sixteen dunnage warehouses on the Aberlour site. This is a Speyside single malt of real standing.

Description
A distillery release of GlenAllachie, a 30 year old, from 1990, cask 6517, at 51.2%, 339 bottles in all. GlenAllachie is a Speyside single malt, founded in 1967 below Ben Rinnes near Aberlour. Its water is the Lochnagar Burn, drawn down from the slopes of Ben Rinnes.
It was distilled in copper pot stills, giving a full bodied Speyside spirit. A Pedro Ximenez cask held it, drawing the rich spirit on over the years. At a great, fragile age oxidation rules, sotolon lending maple and dried fig as beeswax and old leather linger. The full spirit deepens with time, the cask drawing out its darker register. The casks are picked closely, the wood matched to the rich GlenAllachie make. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate. Active first fill wood drives the maturation, the cask deep in the malt.
At a natural 51.2% it is full and rich. A rich orchard sweetness and dark sugar, with raisin, date and treacle from the cask. The mouthfeel is full and coating, the fruit dark and sweet. Dried fruit, spice and a soft oak see it out. This is GlenAllachie's deep, fruity Speyside style.
