Glenallachie 7 Years Old

This official GlenAllachie, a 7 year old, at 48%. It is one of GlenAllachie's Virgin Oak Series bottlings. GlenAllachie is a Speyside single malt, revived in 2017 by the team of Billy Walker. Its stills were doubled from two to four within months of opening, the lyne arms angled down for a fuller spirit. It was built for the 1960s blend boom, its make long destined for the blender's vat.

It was taken gently through wash and spirit stills, for a full make built to take active wood. It was matured in a Hungarian Oak cask, the wood working deep into the malt. At an extractive age eugenol lends a clove note and lactones a coconut, the spirit rich, fruity and full. The wood frames the spirit without ever stripping the full Speyside body. The full spirit deepens with time, the cask drawing out its darker register. Maturation runs slow and even in the on site dunnage warehouses at Aberlour.

At 48%, undiluted, it is dark and full. Baked apple, honey and a dark chocolate, with a spiced, clove edge from the cask. The mouthfeel is full and coating, the fruit dark and sweet. It finishes long, full and fruity. This is a rich, sherried Speyside single malt.
