Description
An 8 year old GlenAllachie from Signatory Vintage, distilled in 2008, from cask 900365, at 48.2%, one of 890 bottles. GlenAllachie is a deep, dark Speyside malt of dried fruit, chocolate and spice. It was designed almost entirely gravity fed, an efficient plant for its time. It was bought in 2017 by Billy Walker and two partners, fresh from selling BenRiach, GlenDronach and Glenglassaugh.
Distilled in copper pot stills, giving a full bodied Speyside spirit. It was fully matured in an Oloroso cask, the wood deep in the rich spirit. At an extractive age eugenol lends a clove note and lactones a coconut, the spirit rich, fruity and full. The wood frames the spirit without ever stripping the full Speyside body. The full spirit deepens with time, the cask drawing out its darker register. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate.
Bottled at a cask strength 48.2%, it is deep and concentrated. A deep, dark sweetness, with dried fruit, fig and walnut from the cask. The mouthfeel is full and coating, the fruit dark and sweet. The finish is rounded, dark and spiced. This is GlenAllachie's deep, fruity Speyside style.
