Description
This official GlenAllachie, an 11 year old, from 2011, cask 7445, at 58.2%, 797 bottles in all. GlenAllachie is a Speyside single malt, the home distillery of master distiller Billy Walker. It was designed almost entirely gravity fed, an efficient plant for its time. It was built for the 1960s blend boom, its make long destined for the blender's vat.
It was distilled to a full, generous cut, shaping a rich Speyside body with real weight. It was matured in a Port cask, the wood working deep into the malt. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time. The full bodied spirit takes active wood well, carrying its dark sugars through the years. The wood frames the spirit without ever stripping the full Speyside body.
At a natural 58.2% it is full and rich. A rich orchard sweetness and dark sugar, with red berry, plum and a dry spice from the cask. The body is full and rich, the fruit deep and dark. It finishes long, full and fruity. This is GlenAllachie's deep, fruity Speyside style.
