Description
This official GlenAllachie, an 11 year old, from 2013, cask 89, at 60.5%, released for a whisky festival. GlenAllachie is a Speyside single malt from the hills above Aberlour, below Ben Rinnes. Under Walker it turned to single malt, with heavy maturation in sherry and wine casks. It was mothballed in 1985 and reopened in 1989, a modern distillery by Speyside standards. It runs unusually long fermentations, up to a hundred and sixty hours, for a thick, ester rich and fruity spirit.
Worked unhurried through the stillhouse, for a full make built to take active wood. It was matured in an Oloroso cask, the wood working deep into the malt. In integration coconut and vanilla knit with the malt, the orchard notes deepening to sultana, date and chocolate. The wood frames the spirit without ever stripping the full Speyside body. The full bodied spirit takes active wood well, carrying its dark sugars through the years.
Bottled at a cask strength 60.5%, it is deep and concentrated. Date, fig and a warm cinnamon, with dried fruit, fig and walnut from the cask. The mouthfeel is full and coating, the fruit dark and sweet. The finish runs long, full and warming. This is a rich, sherried Speyside single malt.
