    An 11 year old GlenAllachie from the distillery, at 61.9%. A rich, sherried malt of date, fig and a warm cinnamon. Known for its heavy sherry and wine cask maturation. Its four stills carry downward angled lyne arms for a fuller spirit. It matures in sixteen dunnage warehouses on the Aberlour site. This is a Speyside single malt of real standing.

    A distillery release of GlenAllachie, an 11 year old, from 2012, cask 7072, at 61.9%, 282 bottles in all. GlenAllachie is a rich, sherried Speyside malt from Aberlour, built on full bodied spirit and active casks. It was designed almost entirely gravity fed, an efficient plant for its time. It was built by Mackinlay McPherson, the firm that supplied whisky to Shackleton's 1907 expedition. Its stills were doubled from two to four within months of opening, the lyne arms angled down for a fuller spirit.

    It was drawn from a thick, full bodied wash, building a deep malt of dried fruit and dark sugar. Maturation came in ex-Bourbon wood, the oak gentle behind the spirit. By the integrating teens the raw notes fade and esters build, the rich spirit growing rounder and darker. The casks are picked closely, the wood matched to the rich GlenAllachie make.

    Bottled at a cask strength 61.9%, it is deep and concentrated. Raisin, chocolate and a warm spice, lifted by a sweet oak. A baked apple and a warm cinnamon lift the middle. A deep finish ends on dried fruit and a dark chocolate. This is a deep, sherried Speyside single malt.
