Description
A distillery release of GlenAllachie, an 11 year old, from 2011, cask 801088, at 62.1%, 688 bottles in all. GlenAllachie is a Speyside single malt, revived in 2017 by the team of Billy Walker. Its water is the Lochnagar Burn, drawn down from the slopes of Ben Rinnes. It runs unusually long fermentations, up to a hundred and sixty hours, for a thick, ester rich and fruity spirit. It was built for the 1960s blend boom, its make long destined for the blender's vat.
Run slowly off the spirit still, giving a full bodied Speyside spirit. It was matured in a Pedro Ximenez cask, the wood working deep into the malt. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time.
Bottled at a cask strength 62.1%, it is deep and concentrated. Date, fig and a warm cinnamon, with raisin, date and treacle from the cask. It is full and fruity, the spirit carrying the cask. The close is rich and dark, fruit over a warm spice. This is the sherry led malt of Aberlour.
