Description
This official GlenAllachie, an 11 year old, from 2011, cask 7463, at 59.5%, 825 bottles in all. GlenAllachie is a Speyside single malt known for its heavy sherry and wine cask maturation. It matures its spirit in sixteen dunnage warehouses on the distillery site at Aberlour. It was designed almost entirely gravity fed, an efficient plant for its time.
Worked unhurried through the stillhouse, building a deep malt of dried fruit and dark sugar. Maturation came in a Port cask, layered over the full GlenAllachie make. By the integrating teens the raw notes fade and esters build, the rich spirit growing rounder and darker. The casks are picked closely, the wood matched to the rich GlenAllachie make. The wood frames the spirit without ever stripping the full Speyside body. The full spirit deepens with time, the cask drawing out its darker register.
At a natural 59.5% it is full and rich. Raisin, chocolate and a warm spice, with red berry, plum and a dry spice from the cask. The mouthfeel is full and coating, the fruit dark and sweet. A deep finish ends on dried fruit and a dark chocolate. This is the sherry led malt of Aberlour.
