Water comes from the Lochnagar Burn off the slopes of Ben Rinnes. Its four stills carry downward angled lyne arms for a fuller spirit. This is a deep, sherried Speyside single malt.

This official GlenAllachie, a 12 year old, from 2011, cask 807022, at 61%, 707 bottles in all. GlenAllachie is a rich, sherried Speyside malt from Aberlour, built on full bodied spirit and active casks. Its stills were doubled from two to four within months of opening, the lyne arms angled down for a fuller spirit. It runs unusually long fermentations, up to a hundred and sixty hours, for a thick, ester rich and fruity spirit.
The spirit was distilled in copper pot stills, giving a full bodied Speyside spirit. A Pedro Ximenez cask held it, drawing the rich spirit on over the years. In integration coconut and vanilla knit with the malt, the orchard notes deepening to sultana, date and chocolate. Maturation runs slow and even in the on site dunnage warehouses at Aberlour. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate.
At a natural 61% it is full and rich. Fig, walnut and a bittersweet chocolate, with raisin, date and treacle from the cask. A dark chocolate and a soft oak give it weight. The close is rich and dark, fruit over a warm spice. This is a full bodied Speyside single malt of real richness.
