Description
An 11 year old GlenAllachie, a distillery bottling, from 2009, cask 7673, at 59.4%, 865 bottles in all. GlenAllachie is a deep, dark Speyside malt of dried fruit, chocolate and spice. It was founded in 1967, designed by the architect William Delme Evans, his fourth distillery after Jura and Tullibardine.
Run slowly off the spirit still, building a deep malt of dried fruit and dark sugar. Maturation came in a Port cask, layered over the full GlenAllachie make. In integration coconut and vanilla knit with the malt, the orchard notes deepening to sultana, date and chocolate. The wood frames the spirit without ever stripping the full Speyside body. Maturation runs slow and even in the on site dunnage warehouses at Aberlour. The full spirit deepens with time, the cask drawing out its darker register. The full bodied spirit takes active wood well, carrying its dark sugars through the years.
Bottled at a cask strength 59.4%, it is deep and concentrated. Date, fig and a warm cinnamon, with red berry, plum and a dry spice from the cask. The body is full and rich, the fruit deep and dark. The finish is rounded, dark and spiced. This is a dark, fruity Speyside single malt.
