Description
A distillery release of GlenAllachie, an 11 year old, from 2008, cask 24878, at 55.3%, 220 bottles in all. GlenAllachie is a rich, sherried Speyside malt from Aberlour, built on full bodied spirit and active casks. It matures its spirit in sixteen dunnage warehouses on the distillery site at Aberlour. Its stills were doubled from two to four within months of opening, the lyne arms angled down for a fuller spirit.
It was worked unhurried through the stillhouse, for a thick, ester rich spirit the casks then deepen. A bourbon barrel held it, the wood adding a soft honey over the fruit. In integration coconut and vanilla knit with the malt, the orchard notes deepening to sultana, date and chocolate. The full spirit deepens with time, the cask drawing out its darker register. The casks are picked closely, the wood matched to the rich GlenAllachie make.
Bottled at a cask strength 55.3%, it is deep and concentrated. Date, fig and a warm cinnamon, with a warm oak spice. The mouthfeel is full and coating, the fruit dark and sweet. Dried fruit, spice and a soft oak see it out. This is a dark, fruity Speyside single malt.
