    A 15 year old GlenAllachie from the distillery, at 58%. A rich orchard sweetness and dark sugar, with dried fruit, fig and walnut from the cask. Built by Mackinlay McPherson, the firm that supplied Shackleton’s 1907 expedition. Its four stills carry downward angled lyne arms for a fuller spirit. This is the sherry led malt of Aberlour.

    This official GlenAllachie, a 15 year old, from 2007, cask 800179, at 58%, 720 bottles in all. GlenAllachie is a rich, sherried Speyside malt from Aberlour, built on full bodied spirit and active casks. Its stills were doubled from two to four within months of opening, the lyne arms angled down for a fuller spirit. It was bought in 2017 by Billy Walker and two partners, fresh from selling BenRiach, GlenDronach and Glenglassaugh.

    Worked unhurried through the stillhouse, for a full make built to take active wood. It was fully matured in an Oloroso cask, the wood deep in the rich spirit. Into oxidative maturity, slow air builds ripe esters and a darker chocolate, fig and date depth. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit. The full spirit deepens with time, the cask drawing out its darker register.

    At a hearty 58% it carries real weight. A rich orchard sweetness and dark sugar, with dried fruit, fig and walnut from the cask. Beneath it run dried fruit, dark sugar and a warm spice. The close is rich and dark, fruit over a warm spice. This is the sherry led malt of Aberlour.
