An official GlenAllachie, a 9 year old, at 48%. Deep and dark, all baked apple, honey and a chocolate. Known for its heavy sherry and wine cask maturation. It matures in sixteen dunnage warehouses on the Aberlour site. Revived in 2017 by master distiller Billy Walker, it now leads with single malt. This is a rich, sherried Speyside single malt.

Description
GlenAllachie from the distillery, a 9 year old, at 48%. This is part of the Wood Finish Series. GlenAllachie is a Speyside single malt, founded in 1967 below Ben Rinnes near Aberlour. It was built by Mackinlay McPherson, the firm that supplied whisky to Shackleton's 1907 expedition. Under Walker it turned to single malt, with heavy maturation in sherry and wine casks. Its stills were doubled from two to four within months of opening, the lyne arms angled down for a fuller spirit.
It was distilled in copper pot stills, for a full make built to take active wood. Ex-Bourbon matured, it was given a finish in a Rye cask for a final sweetness. At an extractive age eugenol lends a clove note and lactones a coconut, the spirit rich, fruity and full. Maturation runs slow and even in the on site dunnage warehouses at Aberlour. The full bodied spirit takes active wood well, carrying its dark sugars through the years.
Bottled at a cask strength 48%, it is deep and concentrated. Raisin, chocolate and a warm spice, with a warm oak spice. Fig, honey and a dark chocolate fill the middle. The finish is long, rich and spiced. This is a Speyside single malt of real standing.
