This official GlenAllachie, an 11 year old, at 48%. This is part of the Wood Finish Series. GlenAllachie is a Speyside single malt from the hills above Aberlour, below Ben Rinnes. It was mothballed in 1985 and reopened in 1989, a modern distillery by Speyside standards.

It was worked unhurried through the stillhouse, for a full make built to take active wood. It was matured in ex-Bourbon oak and finished in a Port cask, a layer of Port over the bourbon vanilla. In integration coconut and vanilla knit with the malt, the orchard notes deepening to sultana, date and chocolate. The full spirit deepens with time, the cask drawing out its darker register. The full bodied spirit takes active wood well, carrying its dark sugars through the years. The casks are picked closely, the wood matched to the rich GlenAllachie make. Active first fill wood drives the maturation, the cask deep in the malt.

At its natural 48% it is rich and chewy. Baked apple, honey and a dark chocolate, with red berry, plum and a dry spice from the cask. It is full and fruity, the spirit carrying the cask. The finish is rounded, dark and spiced. This is a rich Speyside malt of dried fruit and chocolate.
