Description
This GlenAllachie was bottled by Klubb23 (K23), a 7 year old, distilled in 2014, at 51.3%, one of 80 bottles. GlenAllachie is a Speyside single malt, founded in 1967 below Ben Rinnes near Aberlour. It was built by Mackinlay McPherson, the firm that supplied whisky to Shackleton's 1907 expedition.
The spirit was distilled to a full, generous cut, building a deep malt of dried fruit and dark sugar. Maturation came in a Madeira cask, layered over the full GlenAllachie make. In these extractive early years the oak gives vanillin as vanilla and lactones as coconut over orchard fruit and a dark sugar. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time. The casks are picked closely, the wood matched to the rich GlenAllachie make. The full spirit deepens with time, the cask drawing out its darker register.
At a hearty 51.3% it carries real weight. A rich, sherried sweetness, with a nutty, raisined sweetness from the cask. It is full and fruity, the spirit carrying the cask. Dried fruit, spice and a soft oak see it out. This is a rich Speyside malt of dried fruit and chocolate.
