Deanston 13 Years Old 2007 Cask #900143 (Signatory)

This Deanston was bottled by the Pitlochry bottler Signatory Vintage, a 13 year old, distilled in 2007, from cask 900143, bottled at 46%, one of 851 bottles. Deanston is a waxy, honeyed Highland malt made in a former mill on the banks of the Teith. Its wash is fermented long, for a fruity, estery character.

The spirit was worked through a long ferment and the bulbous stills for a waxy, fruity make, the long ferment building a fruity, estery character. Finished in an Oloroso cask, the wood building over the green, waxy fruit. By the integrating teens congeners fade and esters build, the waxy, honeyed spirit growing rounder. The waxy texture is the Deanston signature, carried through the years in cask. Unchillfiltered and at natural colour, it keeps the full waxy body in the glass. Its flagship is the 12 year old, bottled unchillfiltered at 46.3%. A gentle maturation suits the soft make, the honey and wax growing richer with time.

Bottled at 46%, it is rounded. A waxy, malty sweetness, with dried fruit, fig and walnut from the cask. Pear, honey and a creamy malt fill the middle. The close is waxy and warming, fruit over a gentle oak. This is the soft, waxy malt of Doune.
