Deanston 11 Years Old 2006 Cask #900125 (Signatory)

An 11 year old Deanston from the Pitlochry bottler Signatory Vintage, distilled in 2006, from cask 900125, bottled at 62.7%, one of 288 bottles. Deanston is a bright, fruity Highland single malt distilled in a Victorian mill at Doune. It uses 100% Scottish barley and bottles its malt unchillfiltered, with no added colour.

Made on River Teith water and condensed in shell and tube condensers, for a soft, waxy make of green apple and honey. It was matured in an Oloroso cask, the wood working slowly into the waxy malt. In integration lactones (coconut) and vanillin (vanilla) knit with the spirit, the green apple deepening to honey. A gentle maturation suits the soft make, the honey and wax growing richer with time. Unchillfiltered and at natural colour, it keeps the full waxy body in the glass. It draws water from the River Teith, which also drives the turbine that powers the distillery.

At 62.7%, undiluted, it is deep and honeyed. Green apple, honey and a waxy malt, with dried fruit, fig and walnut from the cask. It is fruity and waxy, the malty spirit shining through. The finish is long, waxy and gently spiced. This is Deanston's waxy, fruity Highland style.
