Description
An official release of Deanston, at 40%. Deanston is a soft, malty Highland single malt from the old Adelphi cotton mill at Doune. Its old weaving shed, once full of looms, is now a cool stone warehouse for the casks.
Distilled from unpeated Scottish barley in bulbous copper stills, for a soft, waxy make of green apple and honey. First fill bourbon gave a fuller vanilla and a touch of coconut from the lactones. No age is given, but vanillin vanilla and a soft honey are well integrated over a waxy body. A gentle maturation suits the soft make, the honey and wax growing richer with time. The spirit is condensed in shell and tube condensers for a clean, fruity make. The cool, even temperature of the old weaving shed gives a slow, steady maturation. The mill ran for 180 years before cotton declined and the site became a distillery. It runs an open top mash tun, two wash and two spirit stills of a bulbous shape.
Reduced to 40%, it is mellow. Honey, malt and a gentle clove, with a soft vanilla from the oak. A baked apple and a gentle clove lift it. It finishes long, waxy and warming. This is a fruity, unchillfiltered Highland single malt.
