Description
This official Deanston, a 12 year old, from 2007, at 57.4%. Deanston is a bright, fruity Highland single malt distilled in a Victorian mill at Doune. The mill ran for 180 years before cotton declined and the site became a distillery.
Made on River Teith water and condensed in shell and tube condensers, for a soft, waxy make of green apple and honey. First fill bourbon gave a fuller vanilla and a touch of coconut from the lactones. By the integrating teens congeners fade and esters build, the waxy, honeyed spirit growing rounder. A gentle maturation suits the soft make, the honey and wax growing richer with time. The clean, fruity spirit shows the cask clearly, vanilla and honey to the fore. The light, fruity make takes cask flavour well while keeping its honey and wax. The spirit is condensed in shell and tube condensers for a clean, fruity make. The waxy texture is the Deanston signature, carried through the years in cask.
At a hearty 57.4% it carries real weight. Green apple, honey and a waxy malt, with a soft vanilla from the oak. Pear, honey and a creamy malt fill the middle. A honeyed finish ends on apple and a fiery oak spice. This is Deanston's waxy, fruity Highland style.
