A 17 year old Deanston from the distillery, at 50%. Green apple, honey and a waxy malt run through it, with a light red berry and a dry edge from the cask. The 1785 Arkwright mill became a distillery in 1965, opening in 1966. Its old weaving shed is now a cool stone warehouse for the casks. This is the soft, waxy malt of Doune.

Description
This official Deanston, a 17 year old, from 2002, at 50%, 6003 bottles in all. Deanston is a Highland single malt distilled in a converted cotton mill on the River Teith near Doune. The spirit is condensed in shell and tube condensers for a clean, fruity make.
Worked through a long ferment and the bulbous stills for a waxy, fruity make, for a clean, fruity spirit with a waxy edge. Finished in a Pinot Noir cask, the wood building over the green, waxy fruit. At oxidative maturity vanillin and lactones are fully expressed, the malt deepening over its waxy weight. The light, fruity make takes cask flavour well while keeping its honey and wax. Unchillfiltered and at natural colour, it keeps the full waxy body in the glass. Maturing in the vaulted stone warehouse, the spirit develops slow and steady. It uses 100% Scottish barley and bottles its malt unchillfiltered, with no added colour.
At 50%, undiluted, it is deep and honeyed. A fruity, waxy sweetness, with a light red berry and a dry edge from the cask. Pear, honey and a creamy malt fill the middle. The close is waxy and warming, fruit over a gentle oak. This is a fruity, unchillfiltered Highland single malt.
