Deanston 10 Years Old (57.5%)

An official release of Deanston, a 10 year old, at 57.5%, 5160 bottles in all. Deanston is a green, honeyed Highland malt from the Teith valley, the only Scottish distillery to make its own power. Its old weaving shed, once full of looms, is now a cool stone warehouse for the casks.

Mashed in the open top tun and fermented long for a fruity make, building the honeyed Deanston style. A Pedro Ximenez cask held it, shaping the honeyed spirit over the years. In integration lactones (coconut) and vanillin (vanilla) knit with the spirit, the green apple deepening to honey. River Teith water and a long ferment give the fruity, estery Deanston make. The cool, even temperature of the old weaving shed gives a slow, steady maturation. The mill ran for 180 years before cotton declined and the site became a distillery. The spirit is condensed in shell and tube condensers for a clean, fruity make.

At its natural 57.5% it is concentrated. A waxy, malty sweetness, with raisin, date and treacle from the cask. Soft orchard fruit and honey sit behind the cask. A honeyed finish ends on apple and a fiery oak spice. This is Deanston's waxy, fruity Highland style.
