Description
From the bottler Keeble Cask Company Ltd, a 10 year old Dailuaine, distilled in 2015, from cask 301879, bottled at 58.9%, one of 261 bottles. Dailuaine, founded in 1852, gave Scotch its first pagoda roofed kiln. A fire in 1917 destroyed the maltings, and the distillery was rebuilt soon after.
It was run through the distillery's big copper stills, giving the heavy, meaty spirit at its heart. A refill bourbon hogshead held it, keeping the rich character to the fore. Through integration spirit and wood marry, vanillin settling into vanilla as ethyl esters lend a riper orchard fruit over the meaty malt. The rich, full bodied spirit takes cask flavour well, especially sherry wood. Dailuaine's heavy, malty make is prized by blenders for the body it gives. The distillery was founded in 1852 by William Mackenzie on the banks of the Spey at Carron. Most Dailuaine goes quietly into blends, a robust filler kept in part as single malt.
At cask strength 58.9% it is full bodied. Apple, dried fruit and a meaty edge, with a soft vanilla from the oak. A baked fruit and a warm spice lift it. It finishes robust, malty and warm. This is a rich, malty Speyside single malt.
