A 12 year old Dailuaine from the bottler Edition Spirits, distilled in 2007, from cask HL 16641, bottled at 57.6%. Dailuaine was founded in 1852 by William Mackenzie, and was the first distillery to wear the pagoda roof. Water comes from the Bailliemullich Burn, the spirit drawn off three wash and three spirit stills.

Worked through the big stills for a meaty, malty spirit, to build a robust, malty, sherry loving character. A bourbon barrel held it, vanilla and a soft spice over the malty spirit. Through integration spirit and wood marry, vanillin settling into vanilla as ethyl esters lend a riper orchard fruit over the meaty malt. A first fill sherry cask suits the robust spirit, dried fruit meeting the meaty weight. The distillery was founded in 1852 by William Mackenzie on the banks of the Spey at Carron. Dailuaine's heavy, malty make is prized by blenders for the body it gives.

At its natural 57.6% it is concentrated. A robust, sherried maltiness, with a soft vanilla from the oak. A dried fruit and a malty depth give it weight. The finish runs meaty, fruity and warm. This is the robust, sherried malt of Carron.
