Description
The London merchant Berry Bros and Rudd bottled this Dailuaine, a 14 year old, distilled in 2010, from cask 307761, bottled at 55.7%, one of 281 bottles. Dailuaine was founded in 1852 by William Mackenzie, and was the first distillery to wear the pagoda roof. Water comes from the Bailliemullich Burn, the spirit drawn off three wash and three spirit stills.
It was worked through the big stills for a meaty, malty spirit, to build a robust, malty, sherry loving character. A sherry butt held it, the wood lending raisin, fig and walnut to the robust malt. Through integration spirit and wood marry, vanillin settling into vanilla as ethyl esters lend a riper orchard fruit over the meaty malt. A first fill sherry cask suits the robust spirit, dried fruit meeting the meaty weight. The rich, full bodied spirit takes cask flavour well, especially sherry wood.
At cask strength 55.7% it is full bodied. Dried fruit, malt and a rich, savoury depth, with dried fruit, fig and walnut from the cask. A dried fruit and a malty depth give it weight. A full, malty finish ends on dried fruit and a warm spice. This is a rich, malty Speyside single malt.
