Description
A Dailuaine of a 9 year old chosen by the Adelphi bottler, distilled in 2015, from cask 300968, bottled at 56.5%, one of 324 bottles. Dailuaine is a heavy, fruity Speyside single malt from near Aberlour. A fire in 1917 destroyed the maltings, and the distillery was rebuilt soon after.
The spirit was worked through the big stills for a meaty, malty spirit, for a rich, meaty make that suits sherry wood. A sherry butt held it, the wood lending raisin, fig and walnut to the robust malt. Young and extractive, the cask sheds vanillin (vanilla) and toasted sugars (light caramel) over the heavy spirit. The clean spirit shows the cask clearly, vanilla and fruit over a rich malt. Water comes from the Bailliemullich Burn, the spirit drawn off three wash and three spirit stills. The slow loss of the angel's share concentrates the rich, malty core over the years.
Bottled at a cask strength 56.5%, it is rich. Malt, dried fruit and a rich spice, with dried fruit, fig and walnut from the cask. The mouthfeel is heavy, the fruit carried on a meaty, malty body. A long, full finish carries a savoury depth. This is a full bodied Speyside single malt of real depth.
