Description
A Wolfburn single malt, a 5 year old, bottled at 46%. Just 660 bottles were filled. Wolfburn, at Thurso on Scotland's far north coast, revived an old Caithness distilling name when it opened in 2013. It is the most northerly distillery on the Scottish mainland, on the North Coast 500 at Thurso.
Distilled by hand in a single pair of copper stills on Wolf Burn water, building the fresh far north style. It rested in ex-Bourbon oak for a honeyed sweetness. At just a few years old it is bright and fresh, the young coastal spirit to the fore. The maritime setting lends a faint salt to the maturing spirit. A young distillery, Wolfburn has built a following quickly since its first single malt in 2016. The far north air, salt laden and cool, lends the maturing spirit a coastal edge. The original Wolfburn, founded in 1821 by William Smith, was once the largest distillery in Caithness before falling silent in the 1860s.
Bottled at 46%, it is rounded. A light, citrussy fruitiness, and honeyed vanilla comes through from the ex-Bourbon. A green apple and a citrus note lift it. It finishes clean, fresh and fruity. This is Wolfburn, the far north Highland malt.
