Cask #1378, a 1975 European market release from oloroso sherry, sitting three barrels along from cask #1375 which became the Committee X mas 2006. The close cask numbers suggest these butts were filled on adjacent fill days in spring 1975, sharing distillation lineage and warehouse position before diverging in wood expression over the thirty one years that followed. 453 bottles from a single butt, a substantial outturn for a Spanish sherry cask of this vintage.
Filled into oloroso sherry butt in 1975 and bottled in 2006 at 53.7% ABV, non chill filtered with no added colour. The retained alcohol after thirty one years on Islay points to a cool warehouse position with low evaporation rates, since the maritime climate at Port Ellen drives steady ethanol attrition in most casks. The 600 litre butt format gives long extraction over slow maturation, ideal for the dense flavour loading typical of oloroso.
Oloroso sherry casks impregnate staves with melanoidins (Maillard browning compounds), polyphenols including gallic acid and ellagic acid from Spanish oak, and rancio sotolon from oxidative ageing. Over thirty one years on Islay these bind to the 1975 peat phenols (guaiacol, 4 methylguaiacol, p cresol) and shift the spectrum toward dried fruit, bitter chocolate, leather and stewed prune. The Ardbeg purifier ester signature carries through long sherry maturation as orange peel, candied citrus and spiced apple, the distillery's fingerprint on a darker sherry profile.
