Ardbeg 27 Years Old 1975 Cask #4703 (Oloroso)

An Italian market 1975 single cask from oloroso sherry butt #4703, a scarce cask type in Ardbeg's mid 1970s inventory. Most Hiram Walker era spirit went into refill American oak hogsheads as standard blending stock, so the surviving oloroso filled barrels from this period are sought after both for their rarity and for the very different flavour trajectory they take over long maturation. Bottled in 2002 at the start of the Glenmorangie single cask programme.

Filled into a Spanish oloroso sherry butt in 1975 and matured on Islay for twenty seven years through both mothball periods. Bottled in 2002 at natural strength 47.6% ABV without chill filtration or added colour. The 600 litre butt format has lower liquid to wood surface area than a hogshead, slowing extraction relative to the smaller cask but loading the spirit with rich oxidative sherry character over time.

Oloroso casks contribute melanoidins from the Maillard browning of residual sherry in the staves, gallic and ellagic acids from Spanish oak tannins, and rancio sotolon (the maple syrup and walnut compound) developed during long oxidative ageing. Over twenty seven years these layer onto the 1975 peat profile, where the original guaiacol and syringol compounds bind to sherry polyphenols and shift toward a darker spectrum: dried fruit (raisin, fig, date), bitter cocoa, leather and spice rather than the citrus and tropical ester character of bourbon matured Ardbeg from the same vintage.
