Tres Vidas Anejo is the organic certified expression of the Tres Vidas range, a 100% Blue Weber tequila made at NOM 1480, the Tequila Las Americas distillery in Jalisco that also turns out 123 Organic, El Luchador and Solento. The aim here is a light and fresh anejo rather than a heavy oak bomb, drawn from certified organic agave grown on the Jalisco plain.
The piñas are cooked in a traditional stone oven, milled on a roller mill, fermented with natural yeast and twice distilled before resting twelve to eighteen months across several cask types. The result is balanced and creamy, with cooked agave joined by roasted pineapple, fresh white fruit and almond milk, then hazelnut, lemon balm and a thread of nutmeg, star anise and white pepper. Texture is supple, the finish soft and aromatic at 40%.
