    An official Tomatin single malt matured to 11 year old from 2006, drawn from cask 2843 and bottled at 58.3%. Just 598 bottles were filled. Founded in 1897 high in the Monadhliath hills, Tomatin makes a soft, fruity Highland single malt. Today it works twelve stills, having shifted from blend volume to single malt.

    The spirit was distilled from unpeated malt in copper stills on Allt na Frithe water, giving the light, mellow spirit at its heart. Maturation in a sherry cask laid dried fruit over the fruit. Younger here, it keeps a light, fruity freshness over soft honey. A patient maturation suits the soft, fruity Tomatin character. The very long fermentation is central to the distillery's fruity character. The distillery sits beside the A9, the old road north to Inverness. Cu Bocan focuses on unusual cask finishes, from sherry to wine and beyond.

    At a hearty 58.3% it carries real weight. Apple, pear and a soft honey, and the Oloroso adds figgy fruit and a warm nuttiness. The texture is soft and round, the fruit lifted by honey. The finish runs gentle, fruity and mellow. This is a fruity Highland single malt from the Monadhliath hills.
