From Wilson & Morgan comes this Tomatin, a 35 year old Highland malt from 1976, drawn from cask 10 and bottled at 51%. Only 396 bottles were released. Founded in 1897 high in the Monadhliath hills, Tomatin makes a soft, fruity Highland single malt. Cu Bocan takes its name from a spectral hound said to haunt the Tomatin hills.
Drawn off copper pot stills fed by the burn of the deer, for a soft, apple and pear scented spirit. A sherry butt held it, the wood lending raisin and walnut. Very old Tomatin turns soft and profound, the fruit deep and the oak polished. The mellow make leans on the cask for much of its colour and flavour. It closed in 1906 and reopened in 1909, finding its feet over the following decades. The Antiquary blend came into the group through the blender J and W Hardie. Malt is bought in, the distillery's own floor maltings having closed in the 1980s. For most of its life the distillery rarely ran to its full capacity.
Undiluted at 51%, it is layered. A soft, fruity sweetness, and raisin and a nutty sherry depth build. A dried fruit and a soft oak give it depth. Apple, honey and a soft oak see out the finish. This is a fruity Highland single malt from the Monadhliath hills.
