This Tomatin, an official release, an 11 year old release from 2004, drawn from cask 35281 and bottled at 60%. 251 bottles in all. Tomatin, founded in 1897 in the Highland village of the same name, was once Scotland's largest malt distillery. Tomatin malt long fed blends such as The Antiquary and The Talisman.
It was worked through onion stills for a light, fruity spirit, for the soft, fruity Highland make Tomatin is known for. A refill bourbon cask held it, keeping the fruit to the fore. At this age the spirit is fresh and fruity, apple and pear bright. The unpeated spirit lets the wood and the fruit speak without smoke. The distillery sits beside the A9, the old road north to Inverness. Cu Bocan focuses on unusual cask finishes, from sherry to wine and beyond. Tomatin stands at over three hundred metres, among the highest in the land. An old cattle drovers' road ran through Tomatin, and whisky was made here long before the distillery.
At cask strength 60% it is full bodied. A mellow, fruity character, and vanilla and a soft oak come from the bourbon wood. Soft orchard fruit and honey sit behind the cask. The close is soft, fruit over gentle oak. This is Tomatin's soft, fruity Highland style.
