    This official Tomatin single malt, a 12 year old from 2005, drawn from cask 5221 and bottled at 56.9%. Set in the Highland hills south of Inverness, Tomatin has made single malt since 1897. Water comes from the Allt na Frithe, the burn of the deer, in the Monadhliath hills.

    It was worked through onion stills for a light, fruity spirit, for the soft, fruity Highland make Tomatin is known for. Maturation in a sherry cask laid dried fruit over the fruit. Mid age brings a deeper honey and a riper orchard fruit. Refill oak lets the fruity Tomatin character lead, apple over honey. Special releases like Decades and Warehouse 6 have marked the distillery's milestones. Cold, clean water runs down to the distillery from the hills above. Under Japanese stewardship the focus turned from sheer volume to quality. The very long fermentation is central to the distillery's fruity character.

    At its natural 56.9% it is concentrated. A mellow, fruity character, and the Oloroso gives dried fruit and a toasted nuttiness. It is gentle and fruity, the soft spirit shining through. A fruity, lightly spiced finish lingers. This is the soft, fruity Highland malt of Tomatin.
