Description
Edition Spirits bottled this Tomatin, aged 25 year old from 1994, drawn from cask HL 18213 and bottled at 47.9%. The outturn was 402 bottles. Set in the Highland hills south of Inverness, Tomatin has made single malt since 1897. The core is unpeated, with peated spirit made one week a year and bottled as Cu Bocan.
The spirit was distilled from unpeated malt in copper stills on Allt na Frithe water, giving the light, mellow spirit at its heart. Maturation in a sherry cask laid dried fruit over the fruit. Beyond twenty years the malt grows deep and honeyed, dried fruit and oak spice over orchard fruit. A patient maturation suits the soft, fruity Tomatin character. For most of its life the distillery rarely ran to its full capacity. The make is light and fruity, easy to like and easy to drink. Special releases like Decades and Warehouse 6 have marked the distillery's milestones.
At 47.9%, undiluted, it is deep and fruity. Apple, pear and a soft honey, and the Oloroso gives dried fruit and a toasted nuttiness. The mouthfeel is soft, the fruit carried on a mellow body. A long, honeyed finish carries a fruity lift. This is a gentle, fruity Highland single malt.
