    This official Cu Bocan release, a 28 year old release from 1990, drawn from cask 38407-38412 and bottled at 52.9%. 1400 bottles in all. Cù Bòcan, the peated malt of Tomatin distillery, comes from the Monadhliath hills near Inverness. By 1974 Tomatin ran twenty three stills and was the largest malt distillery in Scotland.

    It was distilled from peated malt for the smoky Cu Bocan make, building the smoky Cu Bocan style. Ex-Bourbon casks held it, soft oak that lets the peat lead. Decades leave it deep and gentle, soft smoke and candied fruit. The smoke softens with age while the fruity base deepens. Under Japanese stewardship the focus turned from sheer volume to quality. The very long fermentation is central to the distillery's fruity character. The distillery sits beside the A9, the old road north to Inverness. Cu Bocan focuses on unusual cask finishes, from sherry to wine and beyond.

    At its natural 52.9% it is concentrated. Wood smoke, honey and a fruity sweetness, and the bourbon cask adds vanilla and a gentle sweetness. It is gentle and smoky, the fruity spirit beneath. A smoky, gently fruity finish lingers. This is Cu Bocan's smoky, fruity Highland style.
