Description
This official Tomatin single malt, a 15 year old Highland malt from 2006 and bottled at 50%. Set in the Highland hills south of Inverness, Tomatin has made single malt since 1897. The core is unpeated, with peated spirit made one week a year and bottled as Cu Bocan.
The spirit was run through the distillery's onion stills after a long fermentation, to build a fruity, gently spiced character. Ex-Sherry wood added a dried fruit richness to the soft make. Around the mid teens the malt gains a fuller honey and ripe fruit. The soft, fruity spirit takes cask character readily across maturation. Cold, clean water runs down to the distillery from the hills above. Under Japanese stewardship the focus turned from sheer volume to quality. The very long fermentation is central to the distillery's fruity character. The distillery sits beside the A9, the old road north to Inverness.
At a hearty 50% it carries real weight. Orchard fruit and a gentle malt, and the Oloroso lends raisin, walnut and a dried fruit richness. It is gentle and fruity, the soft spirit shining through. A fruity, lightly spiced finish lingers. This is the soft, fruity Highland malt of Tomatin.
