Description
A distillery bottling of Tomatin, a 12 year old, drawn from cask Batch 1 and bottled at 46%. Tomatin is the soft, fruity Highland malt of a distillery founded in 1897 near Inverness. Cu Bocan takes its name from a spectral hound said to haunt the Tomatin hills.
Distilled from unpeated malt in copper stills on Allt na Frithe water, giving the light, mellow spirit at its heart. Maturation in a fortified or wine cask lent red fruit and spice. Mid age brings a deeper honey and a riper orchard fruit. Years in oak round the spirit, the orchard fruit deepening with age. For most of its life the distillery rarely ran to its full capacity. The make is light and fruity, easy to like and easy to drink. Special releases like Decades and Warehouse 6 have marked the distillery's milestones. Cold, clean water runs down to the distillery from the hills above. Under Japanese stewardship the focus turned from sheer volume to quality.
At 46% it is gentle, fruity and mellow. Apple, pear and a soft honey, and the Rum cask brings brown sugar and a tropical lift. A dried fruit and a soft oak give it depth. Apple, honey and a soft oak see out the finish. This is a mellow Highland single malt from near Inverness.
