The Lost Explorer Trilogy Collection is a set of three 200ml bottles, each a single agave mezcal: one from 100% Espadin, one from wild Tobala and one from Salmiana. The format invites a direct comparison of three very different magueys, from the balanced cultivated workhorse Espadin through the floral and mineral Tobala to the grassy, dry Salmiana of the highlands.
All three are pit roasted in the artesanal manner, in conical earthen ovens lined with volcanic rock, reclaimed regional wood, soil and river stones, then sealed under tarpaulin and earth and roasted for around three days. The roasted piñas rest two to three days before milling. The producer notes it does not use a donkey drawn tahona, choosing other methods to break down the fibres before fermentation. The roast gives each a cooked agave sweetness and light ember, while the species character carries the differences across the three bottles at 42%.
