    This official Lindores Abbey single malt, aged 5 year old from 2020, drawn from cask 200343 and bottled at 53%. A release of 219 bottles. Lindores Abbey Distillery sits at Newburgh in Fife, on the site where the first written record of Scotch whisky was made in 1494. The Tironensian abbey was founded in 1191 on the banks of the Tay, and welcomed kings for centuries.

    The spirit was run through copper pot stills fed by water from the abbey land, to build a textured, fruity character. Maturation in a sherry cask laid dried fruit over the fruit. Bottled without chill filtration, the texture stays full and the cask speaks clearly. The abbey ruins still stand beside the modern distillery buildings. The bottle shape is drawn from a 12th century pillar found in the abbey ruins. The 1494 Exchequer Rolls record a Lindores monk making aqua vitae for the king, the earliest written reference to Scotch.

    Undiluted at 53%, it is powerful. The Rum cask brings brown sugar and a tropical lift, and the Sauternes lends honey and apricot. A baked apple and a warm spice lift it. It closes layered, fruity and warm. This is Lindores Abbey's young Fife whisky.
