Description
This Lindores Abbey single malt, aged 4 year old from 2018, drawn from cask 180587 and bottled at 55.5%. A release of 732 bottles. Lindores Abbey Distillery opened in 2017 beside the abbey ruins where Scotch whisky was first written of in 1494. Barley is grown on the abbey land and water drawn from a borehole on site, with the whisky bottled at the distillery.
Distilled on water from a borehole the monks first dug, building the layered Lindores style. A sherry cask held it, the wood lending raisin and walnut. A long fermentation builds the fruit that the casks then frame. The late Dr Jim Swan shaped the cask policy, with his signature recharred red wine barriques. Barley is grown on the abbey land and water drawn from a borehole the monks first dug. The first single malt, MCDXCIV, the Roman numerals for 1494, was released in 2021. The Tironensian abbey was founded in 1191 on the banks of the Tay, and welcomed kings for centuries.
At a hearty 55.5% it carries real punch. The Oloroso brings dried fruit, fig and a nutty depth. Soft orchard fruit and toffee sit behind the cask. It closes layered, fruity and warm. This is the modern malt of the 1494 abbey.
