Description
From the bottler Phil & Simon Thompson, an 11 year old Deanston, distilled in 2014, bottled at 54.1%, one of 305 bottles. Deanston is a Highland single malt known for its waxy texture and unchillfiltered bottlings. The spirit is condensed in shell and tube condensers for a clean, fruity make.
It was distilled from unpeated Scottish barley in bulbous copper stills, building the honeyed Deanston style. It was matured in refill ex-Bourbon oak, a soft vanilla beneath the honey. By the integrating teens congeners fade and esters build, the waxy, honeyed spirit growing rounder. The light, fruity make takes cask flavour well while keeping its honey and wax. Vanillin and oak lactones from the wood lend vanilla and coconut over the fruit. The mill ran for 180 years before cotton declined and the site became a distillery. Refill oak lets the waxy, honeyed Deanston character lead the way.
At a hearty 54.1% it carries real weight. Green apple, honey and a waxy malt, with a soft vanilla from the oak. It is fruity and waxy, the malty spirit shining through. Apple, honey and a soft oak spice see out a long finish. This is a waxy, honeyed Highland single malt.
