Straw Boys Poitín is Connacht Distillery's revival of Ireland's unaged mountain spirit, named after the straw masked revellers who gatecrash Mayo weddings in a tradition the west has never quite let go. It is made in Ballina on the River Moy and bottled at 45%, and it is spirit, not whiskey.
Where most poitín goes straight to bottle, this one takes a short rest in ex-bourbon casks, enough to soften the edges without turning it into something it is not. Raw barley, fresh cream and pear sit over a clean alcohol bite, with the faintest vanilla trace from the wood, best served cold or in a cocktail.
