South Pacific Plantation Islands 2007 is a single cask Fiji pot still rum from Maison Ferrand, finished in a Ferrand 10 Generations Cognac cask and aged fifteen years. It captures Fiji at its most expressive, where high-ester fruit meets a bold wine spirit finish.
Matured to fifteen years and finished in Cognac, it is intense and technical, with grapefruit, banana and tropical fruit colliding with polish, rubber and solvent notes that mark out serious Fiji character. The Cognac cask amplifies the fruit and spice, while the palate turns to mango, citrus and warm baking spice. Bottled at cask strength of 65.6% with no added sugar, it is powerful and very long, finishing smoky and warm.
