Description
Siete Decadas is a limited blanco marking seventy years of Siete Leguas, the family house in Atotonilco el Alto that once distilled the original Patron and remains a classic dual method producer. It is made only from wild grown criollo agaves, smaller than standard Blue Weber, which build a higher concentration of their own sugar through their reduced size. That is the heart of the bottling, filled unaged at 42% to show the agave undiluted.
The house cooks in brick and clay ovens and ferments with wild yeast in wooden vats before twice distilling in copper, and this blanco rests on that backbone. The nose offers cooked agave, fresh mint and fennel, mineral rich earth and citrus. The palate is full of cooked agave followed by a garden of herbs and white flowers, a buttery mouthfeel, and citrus with pepper in the background, closing full, sweet and long.
