Rum Exchange bottles this Ron Cristóbal Santa Maria, a 2009 vintage Dominican molasses rum aged fourteen years and finished in Pedro Ximénez sherry casks before bottling at 43%. PX is the sweetest and darkest of the sherry styles, and its imprint shapes the whole character here, pushing an already soft Spanish-style rum toward dessert.
The nose is rich with dried fruit, nutty notes and chocolate over a sweet base. The palate follows the PX lead, chocolate and hazelnut joined by honey and a clear nuttiness, sweet and rounded throughout. This is unmistakably a sweet, after-dinner pour, the PX cask layering raisin and dried-fruit richness onto the gentle Dominican spirit. Drinkers who find it too sweet are reading it accurately; those who love a honeyed, sherried rum will find plenty to enjoy.
