Ron Cristobal Santa Maria comes from Alcoholes Finos Dominicanos and reaches the shelf through 1423, the Danish house known for its detail-obsessed, transparent bottlings. This is a 2009 vintage at forty five percent, a step up in strength and seriousness from the soft, everyday Dominican style, and notably bottled without added sugar.
Molasses-based and distilled on a column still in the regional manner, it has been left dry so the spirit and cask do the talking. The nose opens on ripe peach, molasses and citrus with a spice lift, the palate keeps the stone fruit alongside vanilla and chocolate, and the finish turns spicy and savoury with green pepper and dark chocolate.
